I’ll confess… when I first heard of this idea, I was skeptical. Would it hold up like true toast? Would it even taste like toast?

Fortunately for all the sweet potato fans, sweet potato toast is actually a convenient, delicious, and nutritious way to enjoy your favorite toppings without the heavy carbs.

But… Does it taste like toast?

Well, no. You won’t fool anyone into thinking they are actually eating toast.

And yet, if you’re craving a warm, grain-free, healthy breakfast or snack that is also ridiculously easy to prepare, sweet potato toast checks ALL the boxes!

Paleo Sweet Potato Toast With Superfoods (4 Ways)

What is sweet potato toast, exactly? It requires slicing large sweet potatoes lengthwise, then cooking them just until tender. Broil a little until crispy, then pile on the goodies! Once perfectly toasted, sweet potatoes are sturdy enough to hold all your favorite toppings.

I prefer to leave the skin on because it’s a good source of fiber and provides support for toppings.

Below are 4 different ways to enjoy sweet potato toast… but the options are endless. You can put anything and everything you’d like on toast, on sweet potato toast instead!

Paleo Sweet Potato Toast With Superfoods (4 Ways)

Sweet potato toast is a convenient, delicious, and nutritious way to enjoy your favorite toppings without the heavy carbs.

Ingredients

Goat Cheese & Beet

  • 1 sweet potato large
  • 2 tablespoons goat cheese
  • 1 beet small, cooked
  • 2 leaves fresh basil chiffoned
  • 1 tablespoon feta cheese optional

Almond Butter & Banana

  • 1 sweet potato large
  • 2 tablespoons nut butter preferably sprouted
  • 1/2 banana sliced
  • 1 tablespoon unsweetened shredded coconut
  • 1 teaspoon cacao nibs

Garlic Mayo & Avocado

  • 1 sweet potato large
  • 2 tablespoons mayonnaise
  • 1 clove garlic minced
  • 1/2 avocado sliced
  • 2 tablespoons alfalfa sprouts or other sprouts
  • 2 teaspoons Everything Bagel Seasoning Blend

Salmon & Dill

  • 1 sweet potato large
  • 2 tablespoons organic cream cheese
  • 2 slices smoked wild-caught Alaskan salmon or lox
  • 1 tablespoon red onion sliced
  • 1 teaspoon capers
  • fresh dill

Instructions

Prepare The Sweet Potatoes

  1. Pre-heat oven to 350 degrees Fahrenheit if using ovenĀ instead of toaster.

  2. Trim the ends of the sweet potato with a sharp knife.

  3. Slice the potato lengthwise into 1/4 inch slices. You can also use a mandolin to make sure you get uniform, thin slices.

  4. If toasting in an oven, arrange slices on a wire rack on a baking sheet. Bake in oven for 20 minutes or until tender. Then broil for 3 minutes, watching closely so they don't burn.Ā 

  5. If toasting in a toaster, pop the slices in the toaster. Toast on medium-high setting. You will have to do 5 to 7 rounds.

  6. Remove slices from pan or toaster and allow to cool completely.Ā 

Prepare The Toppings

Goat Cheese & Beet Sweet Potato Toast

  1. Spread thick layer of goat cheese over the sweet potato.

  2. Layer cooked and cooled beets.

  3. Top with chiffoned basil and feta cheese, if desired.

Almond Butter & Banana Sweet Potato Toast

  1. Spread almond butter (any nut butter will work) evenly on the toast.

  2. Add banana slices.

  3. Top with coconut chips and cacao nibs.

  4. Drizzle with raw honey, if desired.

Garlic Mayo & Avocado Sweet Potato Toast

  1. Combine mayo and minced garlic. Spread evenly on toast.

  2. Add avocado slices.

  3. Generously top with favorite sprouts and Everything Bagel Seasoning Blend.

Salmon & Dill Sweet Potato Toast

  1. Spread cream cheese on toast.

  2. Add smoked salmon or lox.

  3. Top with sliced red onions, capers, and fresh dill.
