We are big proponents of family tradition. We love tradition in all it's forms, but we especially like designating days of the week to certain “treats”.
Monday night is Family Home Evening. We sing, we pray, we read, we play, we learn, all together. Wednesday night is Guys Night. I am at the church with the youth that night, so my husband is on his own with our three children. He and the boys watch a show, eat ice cream, and play trucks together.
And Friday night is Pizza Night! Mom makes pizza, dad picks a movie. We lay a big plastic table cloth out in the living room and we devour a saucy pie while we watch a family-friendly flick.
Our oldest son looks intensely forward to our evening traditions, but especially so to pizza night. So without further ado, here is one of our favorite Friday night pies…
Chicken Bacon Ranch Pizza with Collard Greens
Preheat oven to 350 degrees Fahrenheit for a soft crust or 400 degrees Fahrenheit for a crispy crust.
While it's resting, start working with the other ingredients.
Boil or steam collard greens 15 minutes, or until soft.
Remove the leaves from the stems and coarsely chop the leaves to your liking.
Roll out dough.
Prick the dough all over with a fork.
In lieu of tomato-based pizza sauce, spread a thin layer of ranch dressing on the dough and begin adding toppings.
First, a layer of cheese.
Then top the pizza with chicken, bacon, onions, collard greens, and garlic.
Sprinkle a thin layer of cheese over the very top.
Bake for approximately 20 minutes, or until done and bubbling!
The pan on which bake your pizza will influence the texture of the dough. If you want crisp, bake on a pizza stone or untreated floor tile at higher temps. If you want soft, bake on a metal pan at lower temps and brush the crust with butter!
We always have fresh sliced tomatoes and additional ranch handy for dipping!
