Maca Gingersnap No-Bake Treats

 You'll love these nourishing, no-bake treats that are full of healthy fats, enzyme-rich raw honey, and superfoods — like energizing maca powder and coconut!

And these spicy little bites of goodness can be whipped up in 10 minutes in your blender or food processor!  Makes 15 tablespoon-size treats.

Ingredients

  • 2-1/4 cups unsweetened shredded coconut
  • 1/4 cup coconut oil
  • 1/4 cup raw honey
  • 1 tablespoon molasses unsulphured
  • 2 tablespoons maca powder
  • 2 teaspoons powdered ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon allspice
  • 1/8 teaspoon powdered cloves
  • pinch sea salt

Instructions

  1. Add all ingredients to a food processor or blender. 

  2. Process on low-medium speed until the dough begins to fold in on itself. 

  3. You may have to stop the food processor or blender once or twice, scrape down the sides, and process again.

  4. Using a tablespoon-size dough scoop, drop balls of dough on to a parchment-lined cookie sheet. 

  5. Sprinkle with a bit of extra shredded coconut for garnish, if desired. 

  6. Place the treats in the freezer for 10 to 15 minutes to set. 

  7. Enjoy!

    I made your raspberry no-bake treats and really enjoyed those. Now however I’m on a ketogenic diet. I’d like to try these ginger snap treats. Have you don’t these with stevia before?

      Hey, Lee, I haven’t used stevia in any of these recipes. I think decreasing the sweetener that much would affect the outcome of the recipe, meaning you wouldn’t get as many treats and/or they wouldn’t hold together as well. I’m doing THM right now, so I feel your pain! If you do try them with stevia, will you let me know how they turn out? 🙂

    Hi Lindsey, I love your recipes. From the information I read here on the GNOWFGLINS site, I bought Maca from the Maca Team for my husband to help with adrenal issues and chronic fatigue. He began taking it and said it didn’t help him feel any better. But then the other day, he said, “I’ve been taking double the amount and I’ve been feeling more energetic at work! The bag says take 1-3 tablespoons, so I went from 1 to 2, and I think I’ve really been feeling less blah! Better order some more.” This thrilled my heart of course, but when I looked at the bag, I saw that the dosage was 1-3 TEASPOONS, not tablespoons. Since maca is a food, can you take too much? Have you come across this in your research?
