Found a recipe calling for cream cheese but you don’t have any? Drip yogurt or kefir (or clabber) through two layers of 90-count cheesecloth for an easy (albeit slightly more sour) soft cheese. It’s delicious and easy!

In the podcast, I promised I would include the photo above. It shows the stick propped on top of the two cupboards on either side of the sink. On that, I loop paracord and from that I hang a bag of curds. You can also just let your bag sit in a colander suspended over a pot. Hanging is faster (and therefore your soft cheese less sour).

The cheesecloth is stained pink from the wash, I guess. (I didn’t quite remember how — this is an old picture!)

“Jason Matyas is a husband, father of six, lifelong gardener, Air Force veteran, and entrepreneur with a wide-ranging background. He is the Co-Founder of Beyond Off Grid, a documentary film and media project that seeks to inspire and equip people to reduce their dependence on the modern economy by going back to the old paths of productive households and community interdependence. He also recently launched a family business with his children called Seeds for Generations that provides heirloom garden seeds and inspiration for gardening as a family.”
