So good and so simple! All the ingredients can be assembled quickly and prepared in one skillet. With the apples and sweet potatoes alongside the pork chops, there is little need for anything else. Serves 4
Remove the rosemary from the stem, chop and combine with salt, pepper, and paprika.
Season the pork chops on both sides.
In a large frying pan or skillet, melt the fat over medium low heat.
Add the pork chops and brown on both sides.
Remove and set aside.
Add additional fat to the pan if necessary and then add the sweet potatoes.
Cook, turning once, until cooked through.
You may need to cover with a lid to create some steam, and watch carefully as they may burn.
Add the apples and toss to combine.
Cook 1 to 2 minutes until apples are lightly browned and partially cooked through. Don't overcook.
Return the pork chops to the pan and toss with the apples and the sweet potatoes.
Adjust seasoning if necessary.
Serve immediately.
