Ice Cream Base (using an ice cream machine)

Nothing beats the heat of August like a few scoops of ice cream.

  • 4 organic or pastured egg yolks
  • 1/2 cup maple syrup
  • 1 tablespoon  vanilla extract
  • 3 cups heavy cream preferably raw, never ultrapasteurized


  1. Place the egg yolks, maple syrup, and vanilla in a large bowl.
  2. Whisk together until smooth.
  3. Add the cream and whisk until blended well.
  4. Pour the mixture into an ice cream freezer and process according to manufacturer's directions.
  5. Just before the ice cream is ready to remove from the maker, add in 1 cup of the little cookie dough balls (recipe below).
  6. You might have to encourage them down into the ice cream with a spoon.
  7. Once they are mixed in you can remove the ice cream from the machine and place it in a freezer-safe container with a lid.
  8. Place it in your freezer until you are ready to dig in.
