Strawberry-Vanilla-Anise Seed Spritzer

Strawberry... and anise seed?! If you did a double take, don't worry. I did too when I read that strawberry and anise seed pair well together in The Flavor Thesaurus. Once I sprinkled a few anise seeds on a strawberry, however, I discovered their magic for myself. I hope you try it and love them together as much as I do!

  1. Place crushed anise seed in a medium bowl or pint-sized mason jar.
  2. In a saucepan, combine water and honey.
  3. Heat until honey is completely dissolved.
  4. Pour over anise seed, cover, and allow to steep for 10 to 15 minutes.
  5. Strain to remove seeds.
  6. In a saucepan, combine strawberries and vanilla.
  7. Cook until mixture thickens slightly.
  8. Mash with a potato masher or whiz in food processor, blender, or an immersion blender. 

  9. Strain if desired.

  10. Pour into honey syrup mixture.
  11. Stir to combine.
  12. Allow to cool, label, and store in refrigerator for up to 2 weeks.
  13. To serve, pour 2 tablespoons over ice in the bottom of an 8-ounce glass.
  14. Fill glass with sparkling water.
  15. Gently stir to create best flavor.
  16. Garnish as desired.
  17. Enjoy!

Recipe Notes

I haven't tried it, but I have a sneaking suspicion that with an added splash of milk, this strawberry spritzer would make an excellent strawberry egg cream!
