Fruit and Nut Christmas Cookies

  1. Preheat oven to 300 degrees Fahrenheit.
  2. Coarsely chop cherries and dates (if whole).
  3. Chop the almonds.
  4. Combine in a small bowl and pour the water over all.
  5. Let soak for 1 hour.
  6. In a mixing bowl, combine butter, sugar, eggs and vanilla.
  7. Beat well.
  8. Add fruit and nut mixture to the mixing bowl.
  9. Mix well.
  10. Add flour, baking soda and salt to the mixing bowl.
  11. Mix well.
  12. Drop by teaspoonfuls onto baking sheet lined with parchment paper.
  13. Bake for 15 minutes, or until golden brown at the edges.
  14. Transfer cookies to cooling rack to cool, or slide the parchment paper off the baking tray (with the cookieonto a work surface.
  15. Store tightly when cool.
  16. Enjoy!
