Then combine skirt steak, apple, apple juice, dried currants, raisins, beef tallow, garlic, allspice, cinnamon, salt, and pepper in a crockpot insert or Dutch oven.
Stir.
Next, place crockpot on low heat, or turn oven on to 200 degrees Fahrenheit, for 6 hours.
Turn crockpot or oven off.
Then transfer steak to a cutting board.
Set remaining fruit mixture aside.
Mince the meat by first shredding it with 2 forks, then cutting it into small pieces with a sharp knife.
Return the meat to the fruit mixture.
Then stir to combine.
To make the crust:
Place cashews in high-powered blender.
Next, blend on medium until cashews are dry and crumbly.
Add lard and eggs.
Process on medium until a sticky dough forms.
Then transfer to a mixing bowl.
Add coconut flour.
Stir to create a drier, more-workable dough.
To make the pies:
Preheat oven to 350 degrees Fahrenheit.
Then divide dough into 8 equal parts.
Place 4 on a large sheet of parchment paper.
Press into circles with the heel of your hand.
Next, add another piece of parchment paper over the top of the dough circles.
Use a rolling pin to roll out each dough circle to about a 1/4 inch thick.
Then carefully remove the top piece of parchment paper.
Scoop about 1/2 cup mincemeat mixture into the center of each dough circle.
Using a spatula, gently fold the edges of the circle over until there is a pocket all the way around the mincemeat.
Next, turn a large cookie sheet upside down, then carefully slide the parchment paper onto the backside of the cookie sheet.
Repeat with remaining 4 balls of dough and remaining mincemeat.
Then, using a pastry brush, brush the edges of dough with the leftover juice from the mincemeat mixture.
Bake for 15 to 20 minutes.
Finally, cool before serving. Enjoy!
