Sweet potato toast is a convenient, delicious, and nutritious way to enjoy your favorite toppings without the heavy carbs.
Pre-heat oven to 350 degrees Fahrenheit if using oven instead of toaster.
Trim the ends of the sweet potato with a sharp knife.
Slice the potato lengthwise into 1/4 inch slices. You can also use a mandolin to make sure you get uniform, thin slices.
If toasting in an oven, arrange slices on a wire rack on a baking sheet. Bake in oven for 20 minutes or until tender. Then broil for 3 minutes, watching closely so they don't burn.
If toasting in a toaster, pop the slices in the toaster. Toast on medium-high setting. You will have to do 5 to 7 rounds.
Remove slices from pan or toaster and allow to cool completely.
Spread thick layer of goat cheese over the sweet potato.
Layer cooked and cooled beets.
Top with chiffoned basil and feta cheese, if desired.
Spread almond butter (any nut butter will work) evenly on the toast.
Add banana slices.
Top with coconut chips and cacao nibs.
Drizzle with raw honey, if desired.
Combine mayo and minced garlic. Spread evenly on toast.
Add avocado slices.
Generously top with favorite sprouts and Everything Bagel Seasoning Blend.
Spread cream cheese on toast.
Add smoked salmon or lox.
Top with sliced red onions, capers, and fresh dill.
