Place cinnamon sticks in a double-boiler.
Cover with 1 quart of honey.
Cover the pot and bring the water to a gentle simmer.
Allow the cinnamon to steep in the honey for 2 hours.
Remove the honey from the heat.
Pour through a small strainer to remove the cinnamon from the honey.
Store in a glass jar.
