Instructions

To make the mincemeat:

  1. Cut the skirt steak into several large pieces.
  2. Then combine skirt steak, apple, apple juice, dried currants, raisins, beef tallow, garlic, allspice, cinnamon, salt, and pepper in a crockpot insert or Dutch oven.
  3. Stir.
  4. Next, place crockpot on low heat, or turn oven on to 200 degrees Fahrenheit, for 6 hours.
  5. Turn crockpot or oven off.
  6. Then transfer steak to a cutting board.
  7. Set remaining fruit mixture aside.
  8. Mince the meat by first shredding it with 2 forks, then cutting it into small pieces with a sharp knife.
  9. Return the meat to the fruit mixture.
  10. Then stir to combine.

To make the crust:

  1. Place cashews in high-powered blender.
  2. Next, blend on medium until cashews are dry and crumbly.
  3. Add lard and eggs.
  4. Process on medium until a sticky dough forms.
  5. Then transfer to a mixing bowl.
  6. Add coconut flour.
  7. Stir to create a drier, more-workable dough.

To make the pies:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Then divide dough into 8 equal parts.
  3. Place 4 on a large sheet of parchment paper.
  4. Press into circles with the heel of your hand.
  5. Next, add another piece of parchment paper over the top of the dough circles.
  6. Use a rolling pin to roll out each dough circle to about a 1/4 inch thick.
  7. Then carefully remove the top piece of parchment paper.
  8. Scoop about 1/2 cup mincemeat mixture into the center of each dough circle.
  9. Using a spatula, gently fold the edges of the circle over until there is a pocket all the way around the mincemeat.
  10. Next, turn a large cookie sheet upside down, then carefully slide the parchment paper onto the backside of the cookie sheet.
  11. Repeat with remaining 4 balls of dough and remaining mincemeat.
  12. Then, using a pastry brush, brush the edges of dough with the leftover juice from the mincemeat mixture.
  13. Bake for 15 to 20 minutes.
  14. Finally, cool before serving. Enjoy!
