About Katie Mae Stanley

Katie Mae Stanley is the writer at Nourishing Simplicity, where the focus is on nourishing foods, herbal remedies, simple living and faith. Ethnic and Mid-west foods are always a favorite in her kitchen and on her blog. She is also the author of the book Steeped: Simple Nourishing Teas and Treats. Katie Mae spent 10 years as a missionary dorm "mama" for a gaggle (almost 40) of amazing deaf girls at a school for the deaf in Baja California, Mexico. Now she finds herself state side ready to embrace God's next adventure. A cup of tea or coffee and a bit of dark chocolate make an appearance at some point in any given day. Can you tell I'm a huge fan of all things tea and coffee? Although I've made many fauxccinnos over the years, I hadn't yet turned my favorite winter drink -- the London Fog -- into one. Move over London Fog -- there's a new kid in town: the London Fog Fauxccino.

I enjoy a good cup of coffee... Yet sometimes I crave a cup of tea. Not just any cup of tea, mind you, but a cup of Earl Grey -- with frothy milk, rich cocoa, raw honey, and a touch of vanilla extract. Who says a mocha latte has to be made with coffee? Let tea drinkers rejoice that they can now have their mocha sans coffee!

Chocolate is God's gift to women. Am I right? When my friends introduced me to scrumptious, bittersweet chocolate truffles coated in cocoa powder that melt in your mouth, it was only a matter of time before I created my own version of bittersweet chocolate truffles!

Simple breakfasts are always a win in the kitchen, and an oatmeal bake fits the bill! Most of the mixing is done the night before, so in the morning all you have to do is add the last few ingredients while the oven preheats. Hearty oats, fresh apples, warm spices, baked till golden brown -- this is the perfect breakfast on a cold winter morning.

Sometimes I'm just in a stuffing mood... Then the big questions are: what can I serve with it? What new twist can I create? I initially resisted adding sausage to my stuffing. Finally, I caved, and I'm so glad I did! My newest version is a savory sourdough stuffing with Italian sausage!

Love hot cocoa and chai? Now you can have the best of both worlds -- when the two are married in a cup!

Have you felt overwhelmed what others say you should be doing, yet you have trouble managing it all? Keeping up can be discouraging and depressing. Yet, real food is not God and we should take care not to obsess over it to the point we put it on a pedestal. Instead...

Can Real Food Become An Idol?

Mint is easy to grow and hard to kill -- which makes it one of the best plants for a beginning gardener! You can buy a plant at the store or grow your own from cuttings. Here are two methods for growing your own mint from cuttings.

This 'green' smoothie is absent of all leafy greens (which shouldn't be eaten frequently in their raw form). It's a blend of granny smith apple for a bit of sweetness, celery, a carrot, some parsley, ginger, and coconut water -- the perfect pick-me-up as the afternoon slump hits! Or a great way to start your day!

ummer comes hand-in-hand with bug bites. Let me introduce the 'bug bite stick' -- a chapstick tube containing a simple salve made from plantain, echinacea, and lavender. I've made this salve for a few years now, and it really works to relieve the itch!

Sprouted Strawberry Shortcake | Strawberries are perfect on their own, but I love adding them to a lightly sweetened dessert (like... shortcake!) for a spring treat. For this recipe, I use a sprouted pastry flour to create a slightly sweet biscuit baked as one large disk. Top with strawberries or any seasonal fruit! | TraditionalCookingSchool.com

Chicken and Spring Vegetable Soup | Amazing produce like green onions, asparagus, and snow peas are ready to enjoy in the spring. What better way to celebrate spring than with a light soup to highlight the first produce of the season? This savory chicken and spring vegetable soup brings the flavors of spring into your kitchen... | TraditionalCookingSchool.com

How to Dehydrate Apples | As much as I love fall's crisp apples, I can't eat them all before they go bad. That's why I enjoy making pies, apple sauce and muffins. Or, I preserve them through dehydrating -- which is easy and requires very little storage space. Here's how. | TraditionalCookingSchool.com GNOWFGLINS.com
