Grains & Flours
We recommend purchasing 5 to 10 pounds each of various ancient grains and/or flours such as einkorn, emmer, spelt, rye, khorasan (Kamut), barley, buckwheat, quinoa, etc. If you have a grain mill, purchase grains so you have options to mill your own flour (and crack and flake/roll if you are able). If you don’t have a grain mill, purchase flour.
We’ll be exploring the different qualities of the grains in lesson 1, so if you have time, you might wait to order until hearing more so you can have a better idea of which grains to try. Spelt and einkorn are the most versatile, so I would suggest having at least one of those as your basic flour/grain and to get 10 pounds of one or both… and then smaller quantities of any of the other grains you might want to try (buckwheat, barley, rye, emmer, khorasan, and/or quinoa).
Students are asking how many pounds total to buy. It’s hard to say because with each lesson, you’ll have a choice of recipes and grains, as well as scaling up or down to suit your family size.
Don’t go overboard buying a lot! You will be exploring which grains you and your family like… you can always purchase more later of the ones you love and will definitely use again. 🙂
