Meet Anthony and Jami Delgado of 2cool4skoolie.com and EatNourishing.com. They are converting a 1980’s school bus — a “skoolie” — into a 300 square foot home for their family of five.
Why would they do this? They have a heart-felt desire to live within their means and to live simply. In the interview, we get to get to the heart of these matters.
Plus, they get very practical about how they’re going to keep up their traditional food habits, how they’ll continue homeschooling, where they’re going to park their bus, and much more on today’s episode of Know Your Food with Wardee.

What’s in Episode #7?
In this episode of Know Your Food with Wardee, I’m visiting with Anthony and Jami Delgado from 2cool4skoolie.com. You may know Jami from Real Food Kids, our latest online class at GNOWFGLINS.
Jami and her husband are converting a 1980’s school bus — a “skoolie” — into a 300 square foot home for their family of five. You can follow their blog about the project here: 2cool4skoolie.com.
Here’s more about them:
“Anthony and Jami live in Southern California with their three uncommonly creative children. Jami is a homemaker and struggles with juggling her own personal aspirations and the desire to truly serve and give her family everything she has. She is the owner of EatNourishing.com, a real food recipe website and is always learning new ways to do old things.
Anthony is a youth pastor and enjoys playing any musical instrument he can get his hands on. He has chronicled some of his growth and experience in youth ministry on eInquisitive.com and has recently written a book entitled, Hermeneutics Are Like Bellybuttons: Basic Hermeneutics for Youth and Other Ministry Workers that he hopes to publish in the next month.”
Here’s what we discussed in this episode:
- What circumstances led you to consider converting a bus into your family’s home?
- Have any family or physical circumstances made your plans difficult?
- How does your extended family feel about your plans?
- Where will you park the Skoolie?
- How do you envision your life when you’re all moved in?
- How will you keep up with the traditional cooking you do now? How will living in a bus effect your current habits?
- What will homeschooling in a Skoolie look like?
- Do you have plans to keep chickens and grow a garden as you have in the past?
- Will you be able to stock up on foods?
- Do you see yourselves in the bus permanently or do you see this as a temporary step on the way to some other living arrangement?
Also in this episode, I gave a shout out to Marci who was featured in this week’s farm tour: Amazing Graze Farm. And a big thanks to FreeSpirit427 for a 5 star review on iTunes!
You’ll also hear my responses to the very first two questions submitted on the podcast voice line! Yippeee! A big thanks to Chantel for breaking the ice on this new feature. Here’s what she asked:
- What are the differences between yogurt and kefir?
- My yogurt cheese is dry and crumbly — how can I make it smooth and spreadable?

What’s Coming Up…
Next week, I’m visiting with Donielle Baker, author of the book Naturally Knocked Up (and the blog by the same name). We talk about natural fertility and increasing fertility through natural methods rather than conventional methods.
