I love company, especially because I get to share one of my passions — healthy food — and because living out here where we do (and conserving trips into town like we do), I don’t get to visit with local friends as much as I’d like.
Our friends who helped Jeff with fencing last weekend are coming again. They’ll be here for breakfast, lunch and dinner on both Saturday and Sunday.
For breakfasts, I am planning muesli and/or sprouted buckwheat cereal. Eggs for anyone who desires more protein.
For lunches and dinners, I am not done with my planning. I know we’ll be eating colder foods, such as yummy chicken salad, and cold quinoa salad. But I don’t want to eat that for two days in row — 4 meals total — so I am racking my brain for some other cool foods. Perhaps burritos (not gluten-free, but can be with corn tortillas), which is not technically cold food, but can be considered summer food in my book. I think Sloppy Joe’s In A Bowl would be good, too.
For snacks, sweet potato muffins, cinnamon-raisin bar cookies, fruit, red palm oil popcorn.
For desserts, vanilla-coconut ice cream, coconut bark, cookies (above).
For drinks, water (lots of that) and lemon zinger iced tea. I’ve got two 1/2 gallon jars outside warming in the sun right now. I will also make nettle iced tea for allergies. That season is upon us. Oh, I can’t forget that our friends are big fans of Turkish/Arabic Coffee, so we MUST have that, too!
Tonight I will put beans and chickens in the crockpots. I’ll use those in the main dishes for Saturday and Sunday. Saturday morning is when I’ll make the muffins and cookies. Everything else — like salads and popcorn — will be made at the appropriate time.
