Tip of the Week: Homemade Cream Cheese
Found a recipe calling for cream cheese but you don't have any? Drip yogurt or kefir (or clabber) through two layers of 90-count cheesecloth for an easy (albeit slightly more sour) soft cheese. It's delicious and easy!
In the podcast, I promised I would include the photo above. It shows the stick propped on top of the two cupboards on either side of the sink. On that, I loop paracord and from that I hang a bag of curds. You can also just let your bag sit in a colander suspended over a pot. Hanging is faster (and therefore your soft cheese less sour).
The cheesecloth is stained pink from the wash, I guess. (I didn't quite remember how — this is an old picture!)
