On 1 acre, they raise goats, sheep, chickens, and a garden, too, producing 100% of their milk and eggs, 50% of their meat, and 50% of their fruit, veggies, and nuts.

“I have a food question which I’m having a tough time finding answers for – and forgive me if it’s answered elsewhere on your site. I am experienced in the Nourishing Traditions approach, but am having a tough time converting (because of severe allergies) to egg-free, gluten-free, rice-free, corn-free, oat-free baking. Can you tell me if bean flours are healthy if they are soaked first? I have avoided them a long time but when I can’t use so many other things, it would be really handy to use them as well.
My concern is that normally after beans are soaked the water is poured off before cooking. I’m concerned that soaking the flours and then baking them (such as in muffins) will keep the phytates in the food, thus not really accomplishing anything by soaking them in the first place.“
