In this episode of Know Your Food with Wardee, you’ll meet Maureen Validivia, who began her real food journey after more than 10 years of worsening symptoms of Hashimoto’s Thyroiditis (a thyroid disease). Conventional medicine couldn’t help and in fact made her worse. So she began her own healing journey using real foods, traditional food preparation methods, gluten avoidance, and finally a gut-healing diet. Today, she is feeling oh-so-much-better and has experienced 100 pound weight loss (without even trying). Auto-immune disease sufferers or those specifically with Hashimoto’s Thyroiditis will find great inspiration and resources through Maureen’s story and experience.

Tip of the Week
Shared by Katrina: One of my favorite things is to put green onions (with the root bulb on it like they sell in the store) in a jar with about 1/2 inch of water in the bottom. If you leave it there it will keep growing. I just cut off some of the green ends any time I need them and they just keep growing! I change the water and rinse them off about once a week or so they don’t get moldy. They will usually last for a month or two at a time.
About Maureen Validivia
Maureen began her real food journey after 10 years of worsening symptoms due Hashimoto’s Thyroiditis which were not being addressed by conventional medicine. In fact, any symptoms occurring while her lab results were in “normal range”, were considered hypochondriac symptoms or anxiety attacks. Maureen shares her journey out of conventional medicine, into whole foods and now through the fine tuning of her GAPS Diet for Hashimoto’s and food intolerances through Functional Medicine and lifestyle interventions. Her blog is at My Hashimoto’s Thyroiditis and from there, you can find a link to her Hashimoto’s Thyroiditis Support Group on Facebook. She enjoys living in the mountains near Yosemite National Park in Central California with her husband, Adrian and has two grown children, her son Garrett and her daughter Megan, both also diagnosed with Hashimoto’s in their adult life.

As I sit here with tears in my eyes, burning face(because of sensitivities and not being able to keep my hand out of the cookie jar, as it were), and knowing that I’m basically throwing a tantrum…
I’m wondering how y’all got my story?! I haven’t been diagnosed as long as Maureen, but so many of the things she says are ME! I can’t express how this makes me feel…I don’t want to stop listening.
I can’t even express what I’m thinking/feeling right now….
Just thank you!
And thank you God for letting me ‘stumble’ across this site.

Peggy, I’ll make sure Maureen sees your comment and I hope to have her back on to finish talking about the things we never got to! God bless you.
Peggy says
I cannot wait to hear it! 🙂 I hope soon, well after the New Year, 😉 God bless you as well.
Maureen says
Thank you Wardeh and Peggy! I am thrilled that my little (and very nervous) interview is speaking to you (Peggy) so intimately! That has always been my hope – that someone will be helped by my misguided but determined journey! After finding help, it was imperative that I get the word out to as many as possible and Wardeh was so kind to have me! God bless you both this Christmas and may we all find better health in 2014! Thank you so much for taking the time to write and thank you Wardeh for altering me to this comment. 🙂
Maureen says
Whoops…I meant *alerting* me to the comment. Yikes! Merry Christmas!

Does Maureen have a blog, book or website. I would love to know more about her journey. I think I took may have a thyroid issue that my doctor will not take me serious about.
Any info or new podcast would be great if you could let me know.
