Bake Bread (and More) in Your Toaster Oven

Here’s another tip from my friend Christina.

We love having fresh baked dinner bread every night at dinner. If I don’t want to heat the house with the big oven I just bake it in my toaster oven. I make a small loaf usually so we don’t over-eat 🙂 I sprinkle the pan generously with cornmeal and place a log of artisan dough on it. If there is time I let it come up to room temp before flouring the top and slashing. Preheat the little oven to 450 degrees for like 2 minutes and bake!

In our BC (before children) years I would bake a casserole for two in a bread pan. Or last summer I would make a huge batch of cookie dough and freeze it in little round portions. Then every day at snack time I would bake up eight oatmeal cookies in the toaster oven. My six-muffin tray also fits in the toaster oven.

    I also bake using a toaster oven, mine is a convection oven so no need to rotate the pans. I use the lower rack position and as it only holds one regular pan I use
    6 – 500 ml tin cans. Fill the cans half full and allow to rise to the top of the can then bake at 370 F for 23 minutes. I also add in extra ingredients ie: raisins
    coconut, walnuts, cinnamon etc. Use your imagination and make each loaf different. I just made 6 different flavors of small loaves. Watch and if the tops are browning too much cover with foil to prevent burning.
