To deal with the leftovers.
We’ve all had this experience: there’s a little of this, a bit of that, and enough turkey to last until cries of “Turkey again?!” ring in your ears.
It’s tempting to throw it all into the fridge and start Googling “leftover turkey recipes” first thing Friday morning, isn’t it?
Yet, if you take 10 extra minutes now, you can have a pretty shepherd’s pie put together and ready to go for your next meal.

Making a turkey shepherd's pie is super easy — no measuring cups required!
Ingredients
- turkey cooked, chopped into bite-size pieces
- turkey gravy *
- vegetables cooked, cut into bite-sized pieces
- mashed potatoes substitute squash or sweet potato
- sea salt to taste
- pepper to taste
- herbs to taste
- cranberry sauce (optional)
Instructions

Choose a baking dish proportionate to the size of your family and leftovers.

Fill the dish with cooked turkey and vegetables.

If your vegetables were not already seasoned, season to taste with salt, pepper, and herbs -- I personally love summer savory with turkey.

Pour enough gravy over the turkey and vegetables to cover them.

Then spread mashed potato, squash, and/or sweet potato over the top.

If you want to get fancy, you can use a piping bag with a large tip to do this.

Cover and place it in the fridge.

When ready to serve, heat at 350-degrees Fahrenheit in the oven for 30 minutes, or until the gravy is bubbling and the potatoes have started to brown.
Recipe Notes
- *If you don't have enough leftover gravy, add chicken or turkey stock to what you have, and thicken with arrowroot starch to stretch it out.
- Delicious served with leftover cranberry sauce.

What about the stuffing/dressing? Could it be added in with the turkey and vegetables?

Hi Jaime, You absolutely could include the stuffing, either in with the turkey and vegetables or along with the potatoes on top. It’s good either way! If your dressing is bread-based, just be sure that you add enough gravy to compensate for the tendency of the bread to soak up liquid. Enjoy!
