“Hi, Wardee, I’ve now baked with my sourdough started quite a few things (your chocolate cake J, biscuits, bread of all kinds). It all comes out crusty’ish… I really need a recipe or a technique for a soft bread and soft buns (sort of like store-bought hamburger buns or soft sandwich bread). Is it possible to create a soft roll/bun/bread out of sourdough?

Sorry, to clarify… By soft, I mean soft on the outside, not crusty. It seems the long rising time is hardening the outside (no matter now well I cover it with a towel for the 2nd rise). Everything just seems to come out hard on the outside. I try putting them in the plastic bag after the stuff cools and it softens the crust, but it’s still really thick and just too chewy…“

    I’m so looking forward to listening to this one. My Stitcher app hasn’t updated any of the last five episodes (since I first downloaded Stitcher to my Android phone). Do you know if anyone else is having Stitcher issues with your podcast?
