Do you remember the peppermint pattie commercials?

The ones where a person would be swept away by the sensation of a cool minty breeze?

Those images are still stuck in my mind! And great memories, too — I remember sharing peppermint patties with my Pap.

I love preparing food for my family because I know we’re making memories woven from tantalizing smells, scrumptious tastes, and who’s there enjoying the good food together. I share so many wonderful memories with my men and my besties, often involving food and specially-prepared coffee or tea in some way or another. To me, good people and good food go hand in hand!

Today, I’m really thrilled to share my homemade peppermint patties — a treat my family loves!

Only I’ve made them a little more nutritious. 🙂 Instead of using commercial confectioner’s sugar, I make my own by grinding unrefined sugar in my grain mill (you can also whizz in a blender). And the dipping chocolate is homemade, too, and based with coconut oil.

Peppermint Patties

Enjoy the minty freshness! Not only will you catch the attention of your loved ones' taste buds, you'll give them a relatively healthy sweet treat!
Course Dessert

Ingredients

  • 1 organic or pastured egg white
  • 4 cups homemade confectioner's sugar *
  • 1/2 cup raw honey
  • 1 to 1-1/2 teaspoons peppermint extract to taste
  • Homemade Chocolate recipe below

Instructions

  1. Beat egg until frothy, but not stiff.
  2. Slowly add the homemade confectioner's sugar.
  3. Add honey and peppermint extract.
  4. Knead until it has the consistency of dough.
  5. Add more sugar if necessary, until mixture is no longer sticky.
  6. Create small balls with the mixture and press to desired thickness.
  7. Place on a fork and dip in chocolate (recipe below) until fully coated.
  8. Place on a parchment paper lined baking tray.
  9. Chill and then transfer to a container for storage... if they make it that far, of course. 😉
  10. Keep in fridge when not eating.

Recipe Notes

*Grind organic unrefined sugar in a grain mill or whizz in a blender.

Homemade Chocolate

So perfect for dipping!

Ingredients

  • 1/2 cup coconut oil
  • 1/4 cup cocoa powder
  • pinch sea salt
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon  liquid vanilla stevia or to taste
  • 1 tablespoon beeswax pastilles to thicken, optional

Instructions

  1. Place all ingredients in a double boiler. 

  2. Mix well and stir until melted. 

  3. Use to dip the peppermint patties (above).

Recipe Notes

This chocolate can be used to make Almond Cranberry Apricot Bark:

Chop almonds and mix with dried cranberries and apricots.

Spread out in the bottom of a container and pour the slightly-cooled chocolate over top.

Let cool and enjoy!

    My favorite sweet treat right now is Pearl’s Skinny Chocolate (Pearl is the author of “Trim Healthy Mama”). I can’t have sugar or any forms of sugar, so I love her recipe. If you google it, you’ll find it. It has no sugar in it, and it tastes like Reese’s Peanut Butter Cups if the Trader Joe’s version of unsweetened baking cocoa is used. Yum! šŸ™‚ Healthy coconut oil is a big part of it, too, and I love that because it’s thermogenic and helps to burn calories. šŸ™‚

I am very familiar with Pearl and THM – I too have been adapting my diet to the THM diet because I do not do well with sugar or starches myself. And I too get that incredibly sweet tooth and if I cave I will thoroughly pay the price so my Homemade Chocolate Bark has been saving me, but I will definitely need to look this up. Yes Coconut Oil is a HUGE part of our diet for SO many things… Thank you SO much for sharing this.. Blessings to you and yours and hope to hear from you again.. <3

    I really want to try this! Would it ruin the consistency to use a little honey instead of liquid stevia? I’m just not a fan at all and don’t want to purchase it for one recipe.

      Hi Jennifer,

      Honey would work fine vs the liquid stevia. We have our own honey from our bees and I have used that as well. I personally have to stay away from sugar so when I make my chocolate I often use the stevia, but I would prefer the honey. I am also all about using what I have and not purchasing something special for just one recipe.

    We don’t eat any refined sugar could honey or maple syrup be substituted for sugar or are there other options?
