Simply begin with the basic recipe (frozen fruit and dairy-free milk), and then it’s up to you. You’re limited only by your imagination and the ingredients in your cupboards. 😉
5-Minute Dairy-Free Ice Cream
Make this dairy-free, egg-free, and refined sugar-free homemade ice cream in your high-speed blender or food processor! It takes only 5 minutes. Serves 2. Easily doubled or tripled depending on size of food processor or blender.
Ingredients
- 1 1/2 cups frozen fruit
- 1 to 4 tablespoons dairy-free milk of choice such as coconut milk
- sweetener to taste (honey, maple syrup, stevia, a few dates, etc.)
Instructions

Place frozen fruit and sweetener in your food processor or blender. Keep in mind the sweetness of your frozen fruit, and your personal preference. I usually start with 1 to 2 teaspoons of honey OR a few drops of stevia. Some fruits, like bananas, may not need any sweetener at all.

Then process, adding enough milk to keep things moving. Some fruits require more milk than others. Blenders will require more milk than a food processor.

Finally, taste and adjust sweetener if necessary. Enjoy!

*Piña Colada: 1 1/2 cups frozen pineapple + 3 tablespoons coconut milk + 1/2 tablespoon maple syrup + shredded coconut for topping
*Peanut Butter Banana: 2 frozen bananas + 2 tablespoons coconut milk + 1 heaping tablespoon peanut butter + 1 teaspoon honey
*Chocolate Cherry: 1 1/2 cups frozen cherries + 3 tablespoons coconut milk + 1 tablespoon cocoa powder + 1 tablespoon honey

Since I’m an ice cream fanatic, always been over 60+ years, but I’m also diabetic and dairy allergic, well when I was told 6 years ago that was like a death sentence to me. I love ice cream too. When I was told 5&1/2 yrs. ago, I was off the charts allergic to dairy, eggs, soy, etc., my first thought was ice cream and cheese. I had to figure it all out too, which was hard in the beginning, but easy now. I was 53 when diagnosed, very similar to you. I said growing up I was allergic to milk, so it was nice really to get the diagnosis after breaking out head to toe by simply touching a milk carton. People cannot believe people like you and I exist or can eat well. Lets keep proving them wrong. Good health.

How is this ice cream? It’s not even cold? Do you then put it in the freezer?

Frozen fruit gives it the consistency of soft serve ice cream, especially if you use bananas. As long as you don’t have to blend for too long, it stays cold. You can pop it back in the freezer for a few minutes to firm it up a little, too.

Hi Linda, Because the fruit is frozen and you eat it right away, it’s cold, just like dairy ice cream. It’s best eaten right away, as putting it in the freezer will freeze it solid, like a Popsicle.

I’m confused. Step 1 says to add fruit & sweetener, but step 3 says the final step is to add sweetener. Should step 3 say additional sweetener if needed?
