What to do with Thanksgiving leftovers?
That's one of my biggest challenges every year!
Of course, turkey soup and turkey sandwiches are expected… Yet I also enjoy a good turkey salad. Not only is it versatile, but it keeps well and can be pulled out for lunch, a snack, or dinner!
This Curried Turkey Salad utilizes homemade curried mayonnaise for a fun twist. If the raisins and apples are a bit of a stretch for you, don't worry, they were for my husband too. 😉 However, when I served this for lunch, he was so delighted that we didn't have much leftover at all!
Curried Turkey Salad
- 4 cups chopped, cooked turkey
- 1/2 cup raisins
- 1/2 cup chopped apple, any variety
- 1 cup homemade mayonnaise
- 2 tablespoons curry powder
- 2 tablespoons sour cream
- sea salt and pepper to taste
- chopped crispy almonds for garnish
In a large glass mixing bowl, add turkey, raisins, and apple. Toss to combine. In a separate bowl, combine the mayonnaise, curry powder, and sour cream. Pour over turkey mixture and stir well. Adjust seasoning to taste. Serve with crispy almonds sprinkled on the top. Keep refrigerated.
