Everyone has eaten their fill of a beautiful turkey dinner complete with perfectly moist turkey, savory sourdough stuffing, stunning cranberry sauce, and nourishing salads. What to do with Thanksgiving leftovers?
That’s one of my biggest challenges every year!
Of course, turkey soup and turkey sandwiches are expected… Yet I also enjoy a Turkey Shepherd’s pie or a good turkey salad like this one. Not only is it versatile, but it keeps well and can be pulled out for lunch, a snack, or dinner!
This Curried Turkey Salad utilizes homemade curried mayonnaise for a fun twist. If the raisins and apples are a bit of a stretch for you, don’t worry, they were for my husband too. 😉 However, when I served this for lunch, he was so delighted that we didn’t have much leftover at all!
Curried Turkey Salad
Ingredients
- 4 cups turkey cooked, chopped
- 1/2 cup raisins
- 1/2 cup apple chopped, any variety
- 1 cup mayonnaise homemade
- 2 tablespoons curry powder
- 2 tablespoons sour cream
- sea salt to taste
- pepper to taste
- crispy almonds chopped, for garnish
Instructions

In a large glass mixing bowl, add turkey, raisins, and apple.

Toss to combine. In a separate bowl, combine the mayonnaise, curry powder, and sour cream.

Pour over turkey mixture and stir well.

Adjust seasoning to taste.

Serve with crispy almonds sprinkled on the top.

Keep refrigerated.
Recipe Notes
For a complete meal, serve over a bed of greens with homemade bread or crackers on the side.
Variation:
Instead of, or in addition to, raisins and apples try: shredded coconut, dried cranberries, or even a spoonful of chutney on the side.

I love curry turkey/chicken salad! I used to think that I hated all chicken salads. Once I started making my own mayo and added curry I realized how good it could taste! 🙂 I like the idea of adding crispy almonds.

Katie chicken (or turkey) salad is one of my all time favorites. I classify it as comfort food. 🙂 I like it curried, or just about any other way. And yes, homemade mayonnaise makes all the difference in the world.
