I adore the flexibility of summer evenings. Churches tend to cut back on weeknight activities, kids don’t have a hundred games or practices to attend, and life takes on a generally slower pace. (At least, for us it does.) This extra flexibility leaves room for something I’ve always loved: spontaneous guests.
We had the pleasure of hosting three new friends a few evenings ago, and I knew I wanted to have a little something sweet for all of us to munch on. BUT, they were arriving at 8 pm, and I didn’t even get my kitchen cleaned up from our family’s dinner until almost 7 pm. Oh, I guess I should also mention that we don’t have air conditioning, and it had been a particularly awful sweltering warm day. My house sat at a balmy 80 degrees, and I can tell you this much — I love hosting last-minute guests, but I was NOT about to preheat my oven for anyone!
In less than 30 minutes, I had whipped up a batch of No-Bake Coconut Delights. That and all the other scrumptious, no-bake, healthy cookies and bars we’ve got here for you today are the kinds of recipes you want to have in your back pocket — whether it’s 80 degrees in your house or not!
