Below, not only have I gathered up numerous variations of the Holy Trinity of Condiments (ketchup, mayo, and mustard ;)), I also learned that a condiment is anything added in a small amount to flavor food. So I’ve included less common but no less delicious condiments like lacto-fermented horseradish, watermelon rind relish, homemade fish sauce, and gochujang!

Oh, and let me give you a hint: don’t tell your friends, family, neighbors, or co-workers that something is fermented until they’ve not only tried it, but also declared their undying love for it. People sometimes make funny faces when you use words like bacteria and lacto-fermentation with regard to their food. Trust me on this. 😉
