Quiche is a humble yet elegant, egg-based, custard-style pie that can be served for breakfast, brunch, lunch, or dinner.

Pack it with veggies, load it with savory meats, fill it with cheeses or layer it with herbs… it’s such a versatile food that you can add a wide variety of delicious ingredients to it.

How To Make The Perfect Quiche

Quiche is a French savory custard pie or tart that traditionally consists of…

  • a crust
  • eggs
  • milk or cream (or a combination of both)
  • shredded cheeses like Gruyére, Gouda, Cheddar, or Parmesan as well as crumbled cheeses like feta or chévre
  • meats, veggies, herbs for fillings

This delicious concoction then bakes in a pie plate or tart pan for about 45 minutes to an hour.

Most quiches call for 5 to 7 eggs in the custard filling, along with the milk or cream base. Often recipes will call for a ratio of 1 part egg mixture to 2 parts milk or cream mixture.

To create a smooth custard base, use a whisk, mixer, or blender to combine eggs, milk, and seasonings such as salt and pepper.

If using a crust, you’ll want to prepare the crust ahead of time. Quiche crusts often get pre-baked prior to adding the savory liquid egg-dairy filling.

When it comes to quiche fillings, the options are endless!

Use chopped, pre-cooked meats like bacon or ham. Or seafood like crab or lobster.

Veggies (kale, greens, spinach, mushrooms, zucchini, corn, tomatoes, etc.) and fresh or dried herbs are also delicious. To reduce moisture, lightly sauté greens, onion, zucchini, etc., for 3 to 5 minutes before adding to the filling.

To add potatoes or sweet potatoes to quiche fillings, roast them first.

After the crust is prepared and pre-baked, add the egg-dairy filling and evenly distribute the rest of the fillings throughout the pan. Alternatively, you can add the egg-dairy filling to a large mixing bowl and stir in the fillings, then pour the entire mixture into the pre-baked crust.

Bake up the quiche, then serve warm or cold!

Can I Bake Quiche Without A Crust?

People often wonder if they can make quiche without a crust… The answer is yes!

It’s so simple to make a quiche without a crust — a.k.a. crustless quiche.

Just skip the process of making a crust. Instead, make the filling as usual, and pour it directly into a greased pie dish, tart pan, or casserole dish.

Can I Make Quiche Without Milk Or Cream?

Wondering if you can make a quiche without milk or cream? Of course!

It’s very easy to make this type of substitution in a quiche. In fact, you can leave out the traditional cheese too!

For a dairy-free quiche, substitute a non-dairy milk like coconut milk or almond milk for the milk or cream. Simply leave out the cheese.

What To Serve With Quiche

Quiche is incredibly versatile because you can eat it for breakfast, brunch, lunch, or dinner!

For breakfast or brunch, pair quiche with a side of fresh fruit or fruit salad. Many people love to have a small, sweet pastry on the side like a mini muffin or scone with jam.

It’s common to serve a brunch-style quiche with a side of crispy bacon or breakfast sausages alongside freshly-squeezed orange juice or a mimosa.

For lunch or dinner, serve quiche it with a simple side salad, crudités, roasted potatoes, or other roasted veggies.
