Most of them have a Mediterranean bent! That’s because cucumbers are a huge part of Middle Eastern cuisine. I grew up loving them!
So if you have cucumbers coming out of your ears this gardening season, or if you just have a hankering for the cool, crisp, and juicy fruit — try these 6 delicious dishes to make with cucumbers!
#1 — Mediterranean Cucumber-Tomato-Mint Salad
I make this a lot during the summer when both tomatoes and cucumbers are in season! There’s just nothing like a cool salad on a summer evening. Find the recipe here!
#2 — Cucumber-Tomato Salad With Kefir Or Yogurt
This is the same idea as above, but toss the salad in kefir or yogurt instead of olive oil and lemon juice. Season with dill or basil, sea salt, and pepper.
#3 — Cucumber-Yogurt (Or Kefir) Salad
This is a staple at our house in the summer! It’s a bit like eating a cold soup — so garlicky, salty, and tangy. Mmmm! Find the recipe here!
#4 — Quinoa Garden Salad With Cucumbers
Just dump all desired ingredients in a bowl with quinoa, and toss! This allows you to use everything your garden or farmers market produces. I always make sure to add a few cucumbers to the mix. 😉 Find the recipe here!
#5 — Cucumber Sandwiches
Using my sourdough pocket bread from the Sourdough eCourse, you can make delicious pitas with cucumbers! Load them up with your pick of hummus, kefir cheese, tomatoes, falafel, and/or tahini sauce! There’s no way to go wrong.

Strangest thing. Our cukes are not growing well this year. I’m not sure what the problem is…they are just tiny. I planted from seed in the middle of May, but the plants are only about 2 inches tall. We’ve still got a couple months of growing season here, hopefully they’ll get going to I can do some pickling, too! :o)

So are you saying you fermented a bunch of cukes (for pickles) last year and are still eating them now? Wouldn’t they get really salty/tangy after that long? And you’d have to keep in fridge. I don’t have that kind of room. Just curious.
