What’s a special treat we look forward to as soon as the holiday season arrives that is also a great way to use our nourishing pastured eggs?
Homemade eggnog!
While this recipe deviates somewhat from tradition, it will provide you and your family with a nourishing boost during a time usually loaded with junk food and unhealthy meals.
This recipe utilizes coconut milk instead of milk and cream. I do, however, beat the egg whites to give it more volume and a texture similar to that of traditional eggnog.
We enjoyed ours as a breakfast smoothie, and for that reason I added a few tablespoons of almond butter to give it a bit more of a protein kick.
This can be served as a dessert or a snack as well, accompanied by a healthy holiday cookie or two. 😉
Dairy-Free Banana Eggnog Shake

While this recipe deviates somewhat from tradition, it will provide you and your family with a nourishing boost during a season usually loaded with junk food and unhealthy meals. Serves 4.
Ingredients
- 4 organic or pastured eggs separated
- 1 full fat coconut milk
- 4 tablespoons almond butter optional
- 4 tablespoons raw honey or more to taste
- 4 teaspoons vanilla extract
- 2 teaspoons ground nutmeg plus more for serving
- 2 bananas
- 3 ice cubes made from pure water
Instructions

In the bowl of a large, heavy stand mixer, beat the egg whites until soft peaks form. Set aside.

To a blender, add egg yolks, honey, vanilla, nutmeg, banana, and ice cubes.

Blend until creamy and all ingredients are incorporated.

With a spatula, gently fold the liquid in the egg whites.

Pour into glasses, top with additional nutmeg.

Serve immediately.

I was wondering why you decided to add the egg whites to the shake? Does not adding the egg white block mineral absorption as they contain anti-nutrients? http://www.thehealthyhomeeconomist.com/are-raw-egg-whites-healthy/

Guro, I was not aware of egg whites blocking mineral absorption, and I personally have never had an issue with eating them raw or cooked. They can however be easily eliminated as an optional ingredient if you’d prefer not to include them. The shake won’t have the volume, but the flavor should not be compromised.
