15 Easy Breakfast Casserole Recipes

Breakfast casseroles make a comforting, delicious breakfast in one baking dish. From sweet blueberry strata to sausage frittata, there’s something for everyone.

These make ahead breakfast casserole recipes are great for feeding a crowd, whether it’s a brunch celebration, special birthday gathering, or just a quiet family breakfast. If there are any leftovers, they keep well in the refrigerator for several days.

These casseroles are easily prepared ahead of time. In the morning, they go from refrigerator to oven to table for the entire house to enjoy!

The Perfect Make-Ahead, Overnight Breakfast

As already mentioned, most of the casserole recipes below can easily be made the night before. Some have instructions in the post to do so but others you may have to use your own judgment to see if the ingredients will withstand the overnight stay in the refrigerator.

My personal preference is to add delicate greens such as spinach just before cooking, unless the recipe calls for sauteing it first.

After preparing overnight breakfast casserole, simply cover the casserole dish and refrigerate overnight. Allow to come to room temperature before baking and cook per instructions.

Another option to help out with make ahead casseroles is to simply prepare all the individual ingredients the night before but leave the assembling until the morning. This is a great option for those who don’t care for “overnight” foods.

Simply, wash, cut, and prepare all veggies. Cook bacon, sausage, or whatever other meat is called for.

To take it one step further, consider setting out all the needed supplies such as mixing bowl, large bowl whisk, and casserole dish. This will cut down on the stress of hurried mornings, especially if it’s a special holiday or birthday morning!

4 Tips To Make The Best Breakfast Bake

Use cooking spray to grease the dish with oil before adding casserole contents. It will make serving and clean up much quicker and easier. I love and use Trader Joe’s Coconut Oil spray. I promise the coconut taste is undetectable. (Here’s how to make your own homemade cooking spray!)

No pretty casserole dish? No worries! Add a country look and feel by using a large cast iron skillet instead. It’s especially convenient if you need to saute onions or sausage. Everything can literally be done in the same pan without dirtying up extra dishes. Check out the frittata recipes below to use this super easy method for breakfast bakes.

Lots of greens! To add extra nutrition, I love topping casseroles with extra greens. Parsley, cilantro, green onions, and dill are my favorite. I use them frequently in savory breakfast casseroles.

Egg casserole leftovers generally keep well in the refrigerator for up to 4 days, depending on the ingredients used. Be sure to read the notes to these specific recipes for instructions regarding leftovers and reheating.

Healthy Hashbrown Breakfast Casserole — This egg-free casserole is also gluten-free and super easy to make ahead for an easy breakfast!

Delicata Squash, Pork and Bacon Breakfast Casserole — This is a special-day breakfast casserole that makes a great addition to any holiday breakfast. It’s Whole30 and AIP — that means an egg-free, grain-free, dairy-free breakfast casserole!

Artichoke Feta Breakfast Casserole — This is the perfect breakfast or brunch casserole: rich and super satisfying! It’s special, and it’s beautiful. And the prep time is only 20 minutes!
Asparagus and Goat Cheese Frittata — This simple frittata is bursting with fresh flavors from smoky, roasted asparagus and creamy goat cheese. In lieu of asparagus, you can use zucchini, broccoli or Swiss chard. If you don’t have goat cheese, try feta or peccorino. The options are endless.

Butternut Squash Quiche with Italian Sausage — Delicate egg with swirls of soft goat cheese cradles roasted butternut squash, Italian sausage, fennel, and apple with accents of sage, cinnamon, and fresh marjoram. As soon as you take a bite of this delicious quiche, you’ll know autumn has found a home.

Spinach and Feta Greek Egg Bake — This Greek-inspired spinach and tangy feta egg bake seasoned with oregano is full of Greek flavors. Get creative and throw in kalamata olives or sun-dried tomatoes. No spinach on hand? Any leafy green will work such as kale or Swiss chard. For an added kick, sprinkle with chili flakes before serving.
