As someone totally new to einkorn and looking for recipes, I’m wondering why almost all of these include sourdough. I don’t have sourdough starter and really don’t want to mess with it right now. Is there a major benefit to pair it with einkorn?

I am not involved with Traditional Cooking School, although I think it is a great organization. But to answer your question, besides the fact that sourdough breads, etc. taste fantastic, they are easier to digest.

Just to add my 2 cents, sourdough is comparable to yeast in time needed. A bit longer but SO worth it in taste, and it lowers the glycemic index as well.
